Lentil & Vegetable Harira Soup
Warm, hearty and naturally nutrient-rich
Ingredients
- 1 cup red or brown lentils
- 1 chopped onion
- 2 tomatoes, grated or blended
- 1 carrot, chopped
- 2 celery stalks, chopped
- 1 handful of fresh coriander
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1–2 tbsp olive oil
- Salt and pepper
- Water or vegetable broth
Instructions
- Sauté onions in olive oil until soft.
- Add tomatoes, spices and vegetables; cook 3–4 minutes.
- Add lentils and cover with broth.
- Simmer for 30–40 minutes until creamy.
- Garnish with fresh coriander.
