Lentil & Vegetable Harira Soup

Warm, hearty and naturally nutrient-rich

Ingredients

  • 1 cup red or brown lentils
  • 1 chopped onion
  • 2 tomatoes, grated or blended
  • 1 carrot, chopped
  • 2 celery stalks, chopped
  • 1 handful of fresh coriander
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1–2 tbsp olive oil
  • Salt and pepper
  • Water or vegetable broth

Instructions

  • Sauté onions in olive oil until soft.
  • Add tomatoes, spices and vegetables; cook 3–4 minutes.
  • Add lentils and cover with broth.
  • Simmer for 30–40 minutes until creamy.
  • Garnish with fresh coriander.
