Ingredients
- 2 cups diced pumpkin
- 1 onion
- 1 cup light coconut milk
- 1 tsp curry powder or mild chili
- 1 tsp turmeric
- Olive oil
- Salt & pepper
Instructions
- Sauté onions until soft.
- Add pumpkin cubes and spices; cook 5 minutes.
- Add water until pumpkin is covered; simmer until soft.
- Blend until smooth and add coconut milk.
