Chicken & Barley Stew

Ingredients
- 2 chicken breasts or thighs
- 1 cup barley
- 1 onion, chopped
- 1 carrot, chopped
- 1 zucchini, chopped
- 1 bay leaf
- 1–2 garlic cloves
- 1 tsp black pepper
- 1 tsp cumin
- Salt
- Water or broth
Instructions
- Sauté onions and garlic until fragrant.
- Add chicken and brown slightly.
- Add barley, vegetables, spices, and broth.
